*From Grass to Saag*
Saag was actually just grass originally...
In ancient times, when people cooked and tasted this grass, they liked it very much...
But if anyone asked what they had eaten, they felt ashamed to say they had eaten grass..
Therefore, one day, a wise old man, after some contemplation, reversed the word "Ghaas" (grass)...
Now it came to be named "Saagh"...
Then with the passage of time, the name was shortened, and from "Saagh" it became "Saag"...
Now in the rural areas of Punjab, it is eaten as a respected vegetable...
While its origin remains exactly what is mentioned in the first line.
